Each year, 700 billion of milk consumed on the planet. Or 22 000 liters of milk per second! Over the past three decades, global milk production has increased by more than 50 percent, from 470 million tons in 1981 to 727,000,000 tons in 2011.


The global dairy market

Global production is dominated by the cow's milk , 83% of the quantities produced in 2010. The freshest buffalo milk weighs 13%. It is not popular in Europe and mainly collected in Asian countries (India, Pakistan, China).

Followed by goat milk (2%), sheep (1%) and other mammals, such as camel (0.2%).

The consumption of dairy products is growing rapidly in emerging countries (India, Pakistan, China, Brazil ...) due to the increase in population and living standards, urbanization and changing dietary habits.

The Worldwide milk production

Trade on world markets develop (milk powder, butterfat, cheese ingredients) even though they represent only 7% of the production.

All milks together, the three major world powers are :


  1. Asia. She won first place due to its massive collection of buffalo milk (55% of its milk production in 2008).
  2. Europe (in the broad sense, IE including Russia and the EU-27), ranks second.
  3. The American continent took third place in the standings. The USA are the undisputed leaders as they provide alone almost half of the production.

In 2010, there were 265 million dairy cows on the planet. More than a third of livestock live in Asia, 15% in Europe and only 3% in the United States.

Countries with the highest surplus milk are New Zealand, United States of America, Germany, France, Australia and Ireland. Countries with deficits in milk are the most important are China, Italy, Russia, Mexico, Algeria and Indonesia.

Accordingly , trade in global markets develop (milk powders, butterfat, cheese ingredients) even though they represent only 7% of the production.

New Zealand, Australia, the European Union and the United States are the main suppliers of milk. Countries in Asia , the Middle East and Latin America are the main customers.

A true production decline (-3%) is observed in Russia where increasing imports (+60% butter since January 2013) Ditto for Japan (9%) and Algeria.
